The Recipe
----------

### Ingredients 1x2x3x



- 2 cups whole milk yogurt about 450 g
- 1 ¼ cups mayonnaise about 300 g, preferably Duke’s or similar
- 1 tablespoon curry powder about 15 g
- 1 tablespoon finely grated garlic about 3 cloves or 15 g
- 1 teaspoon ground turmeric about 5 g
- Zest of 2 lemons
- 1 ½ tablespoons fresh lemon juice about 20 g
- ½–1 teaspoon salt to taste
- 1–3 tablespoons water as needed to thin (optional)





 

### Method

#### Combine the base ingredients:

- In a medium mixing bowl, add the yogurt and mayonnaise.
- Whisk until the mixture is smooth and well combined.



#### Add the spices and aromatics:

- Add the curry powder, grated garlic, turmeric, lemon zest, and lemon juice to the bowl.
- Whisk again until the dressing is evenly mixed and the color is a uniform golden yellow.



#### Season and adjust:

- Add ½ teaspoon salt and whisk to incorporate.
- Taste and add more salt if needed.
- If the dressing is thicker than you’d like, whisk in 1–3 tablespoons of water, a little at a time, until it reaches your desired consistency.



#### Chill and serve:

- Transfer the dressing to a jar or airtight container.
- Refrigerate for at least 20–30 minutes to allow the flavors to meld, if you have time.
- Serve drizzled over salads, grain bowls, roasted vegetables, or grilled proteins.





 

 



### Chef's Notes

- Yogurt: Whole milk yogurt gives the creamiest texture and best flavor. For a thicker, dip-like consistency, use Greek yogurt and reduce or omit the water.
- Mayonnaise: Use a mayo you enjoy, as it contributes to the overall flavor. Duke’s-style mayo works especially well.
- -Spice level: Curry powders vary. Start with 1 tablespoon and add a bit more if you want a stronger curry flavor.
- Make-ahead: This dressing keeps well in the refrigerator for 4–5 days. Stir before serving; if it thickens, thin with a splash of water or extra lemon juice.
